Dataset on velocity fields around single and interacting particles sinking through rheological and density transitions

This dataset includes: (1) Measurements of velocity fields around plastic spheres and disks (POM, ABS) settling through a two-layer liquid column consisting of artificial seawater (AS) with xanthan gum, forming Newtonian and non-Newtonian layers; (2) rheological properties of xanthan gum dispersions in AS, including flow and viscoelastic characteristics. Velocity fields were analysed using Particle Image Velocimetry (PIV) in a settling column, while rheological measurements were performed to evaluate the flow behaviour and viscoelasticity of the test liquids.
