Dataset on interacting spheres settling through rheological transition

This dataset includes: (1) raw films of sphere pairs settling through a two-layer liquid column consisting of artificial seawater (AS) with xanthan gum, forming Newtonian and non-Newtonian layers; (2) rheological properties of xanthan gum dispersions in AS, including flow characteristics.
